Banana Bread with Brown Sugar Topping
This banana bread is sweet, and very moist. The brown sugar on top gives this bread a nice, sweet crunch.
Ingredients:
- 2 large (or 3 small) ripe bananas
- 1/4 cup oil
- 1 cup sugar
- 1-1/2 cups flour
- Pinch of salt
- 1 egg, beaten
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- Optional: 1/2 cup pecans or walnuts, finely chopped
- 1 tablespoon brown sugar, sprinkled on top before baking
Instructions:
Pre-heat the oven to 350 degrees. Grease a loaf pan, and set aside.

Using a fork, mash the bananas in a bowl.
Add the remaining ingredients, except the brown sugar. Mix with a wooden spoon until combined.

Pour the batter into the prepared loaf pan. Sprinkle the brown sugar on top.
Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
Makes 1 loaf.
