Grand Opening - One Dish Cuisine Cafe, Deli and Bakery

Finally, a place where the whole family can eat! One Dish Cuisine Café, Deli and Bakery in Ellicott City, MD, will welcome those with Celiac Disease, Gluten Intolerance and/or the top eight food allergies (egg, dairy and casein, soy, nuts, peanuts, fish, shellfish) back to the table by offering a safe place to eat wonderful food at reasonable prices.   There will even be options for Vegans or those with Corn Allergies.  The primary menu features sandwiches, subs, salads, pizzas, burgers and fries along with fresh baked breads and desserts utilizing all natural and organic ingredients wherever possible.  Customers may also purchase fresh baked breads or frozen entrees to take home. The deli has dedicated slicers for Dietz and Watson Deli Meats and Cheeses along with Daiya Foods’ delicious dairy free products.   The great thing about our products is that people don’t even realize they are eating allergy free food when they taste it, which makes it a great place for the whole family, even for those without food restrictions.


Currently, there are few safe places to dine out for those with Celiac Disease or Gluten Intolerance and even fewer places to eat if a person has multiple food allergies or restrictions. Celiac Disease is an autoimmune disease where the body reacts to Gluten (wheat, rye and barley) which can wreak havoc on the entire body causing many serious health complications.  There is no medication, strict adherence to a gluten free diet is the only treatment and many react to just a grain of gluten.  Those with Gluten Intolerance exhibit the same symptoms of Celiac Disease, but test negative for the gene. Many children with Autism have responded incredibly to a strict Gluten, Casein and Soy Free diet but have never been able to experience going out to eat a pizza, burger, fries or even a “milk” shake.  One Dish Cuisine’s has changed that.  The facility is completely gluten free and peanut free and is certified Gluten Free (5ppm) by the Celiac Sprue Association. All products have been tested by an independent lab to ensure they are free of gluten and other allergens. The menu is color coded by allergen’s for ease of ordering.


Diagnosed with Celiac Disease over twenty years ago, the Chef and Owner, Maureen Burke, knows how hard it is to find great tasting food options that are safe from cross contamination, one grain for Maureen can cause severe symptoms as well as brain fog, speech issues, disorientation and balance issues. When her young nephew was diagnosed with Autism (PDD-NOS) four years ago and went on a Gluten, Casein and Soy Free Diet, she began creating menu options to accommodate him as well.  He responded incredibly to the diet and is completely medication free. The change was amazing to all; including his teachers. Having spent most of her life as Lactose Intolerant, she later learned that she was actually Casein Intolerant (allergic to the casein protein found in dairy products) Maureen found herself following the exact same diet as her nephew.   When the company was founded in 2010, it quickly became apparent that many other people had other food allergies in addition to Celiac or Gluten Intolerance and One Dish Cuisine happily responded to the need.

Currently One Dish Cuisine provides meals for Children’s National Medical Center, Anne Arundel Medical Center, Carroll Hospital Center, grocery stores and several restaurants in the area.  Many Americans are afflicted and the numbers are astonishing: Gluten Intolerance: 18 million (about 6%), Celiac Disease: 3 million + (1%),   Autism: 1 million (1 in 80 children in Maryland), Children with other Food Allergies: 6 million (8%), Adults with other Food Allergies: 9 million (4%).


There is a way to make food taste the way you remember it, and customers can tell, because the owner and family members eat this way too! Stop in for a meal and you will definitely understand the company slogan, “One Dish Cuisine: No Gluten, No Soy, No Casein…. Welcome Back to the Table!”
