I'm a mom and wife who loves all things sweet and homemade, and I'm baking to end childhood hunger!

Banana Bread with Brown Sugar Topping

Ingredients:

  • 2 large (or 3 small) ripe bananas
  • 1/4 cup oil
  • 1 cup sugar
  • 1-1/2 cups flour
  • Pinch of salt
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Optional: 1/2 cup  pecans or walnuts, finely chopped
  • 1 tablespoon brown sugar, sprinkled on top before baking

Instructions:

Pre-heat the oven to 350 degrees.  Grease a loaf pan, and set aside.

Using a fork, mash the bananas in a bowl.

Add the remaining ingredients, except the brown sugar.  Mix with a wooden spoon until combined.

Pour the batter into the prepared loaf pan.  Sprinkle the brown sugar on top.

Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.

Makes 1 loaf.
